1) Cut the wings into flats and drums, discarding the tips. Rinse under cold water, then pat completely dry — moisture prevents crisping.
2) Preheat the oven to 425°F. Combine salt, pepper, garlic powder, and baking powder in a large bowl or zip-top bag. Add the wings and shake until evenly coated, making sure no clumps of baking powder remain.
3) Spread the wings out on a parchment-lined baking sheet, ensuring they’re spaced apart so the skin can crisp rather than steam.
4) Bake for about 40 minutes, flipping at the 20-minute mark, or until the internal temperature reaches 165°F and the skin is golden & crisp.
5) Transfer the wings to a bowl and toss with your preferred Blind Squirrel Sauce until fully coated. Serve immediately.
Sticky-Wing Variation
After tossing in sauce, reduce the oven temperature to 250°F.
Place the wings back on the baking sheet and return them to the oven for 10 minutes to caramelize the sauce and create a sticky finish.
